Yummy Grilled Peppers…Thanks Pam!

I recently walked across the street to visit my neighbor, and morning workout partner, Pam, and was greeted by the most wonderful smell as I walked through the front door. She had put together a little snack of stuffed grilled peppers. They weren’t time-consuming to make, and were delicious! I asked her for the recipe and immediately duplicated it later that evening for my family.

Here’s what she did:

1. Take baby bell peppers in an assortment of sizes and colors. Core the stem and inside (seeds) out of them.

2. Stuff each little pepper with half a wedge of Laughing Cow Cheese. They now offer low-calorie alternatives and I chose Mozzarella Sun-Dried Tomato Basil.

3. Cap off each pepper by rolling up one turkey pepperoni and stuff it in like a cork.

4. Place the peppers on tin foil and put them on the grill for about 10-15 minutes, or to your desired level of grilling.

What you will have is a delicious, low-calorie treat that is also quite filling. We estimated that each pepper is less than 40 calories. They make for a perfect summertime snack. I loved them and will continue to make them a healthy, tasty part of my family’s menus.
